In the Kitchen with Natalia – Chocolate Cherry Truffles

Cherries are one of my favorite summer fruits. I can eat them non-stop! Chocolate and cherries are a classic combo, but at first glance, there’s no way to tell there’s a sweet, fresh cherry wrapped up inside these little bites. I love surprises! The truffle base is so simple, you can play around with your favorite fruits, nuts and spices to create your own masterpiece. Have fun!

Makes one dozen

Ingredients:

3/4 cup raw cacao powder
seeds of one vanilla bean
pinch of salt
1/2 cup pitted medjool dates
1/4 cup raw honey
1 tablespoon coconut oil
12 pitted cherries
2 tablespoons raw cacao powder

Instructions:
Place the cacao powder, vanilla bean and salt in a food processor. Pulse gently to combine. Add the dates, honey and coconut oil and process until sticky and smooth. To make each truffle, roll about one tablespoon of chocolate into a 1″ ball with your hands. Flatten into a circle and wrap around the cherry. Roll again to make a smooth, round ball. Place the 2 tablespoons of cacao powder on a plate. Roll the cherry filled truffle in the cacao powder and give it one last roll with your hands for an even coating. Set in the refrigerator for one hour to firm. Consume within 2 days since you’re using fresh cherries, or freeze for longer storage.

The Florida House Goes Solar

Built as a testament to sustainable living, the Florida House opened in 1994 to showcase to the public alternative energy options featuring the latest technologies in water and energy conservation, environmental landscaping, and to support local economic development.

Lennox SunSource

Last week, we were on hand for the Florida House’s newest addition, a state-of-the-art Lennox SunSource Home Energy System, a solar powered air conditioning system that will be the first of its kind in Florida. Because air conditioning can account for nearly 56 percent of an average household’s electricity consumption, the Florida House hopes to show homeowners that installing a solar powered air conditioning system can not only contribute to lowering electric bills but can also offset other utility demands because the solar system stores energy for when the sun isn’t shining and can produce electricity for other household demands.

The system was donated by Tri-County Air Conditioning and Heating, Inc., one of the largest air conditioning service and replacement companies in Florida.

I’ve always had a thing for Chinese food. Where it used to be a craving for the greasy, fried version, now I reach for fresh, crunchy veggies, and homemade, flavorful sauces. In this dish, broccoli and red pepper are tossed in a zesty orange sauce. With sesame, ginger, and chili, this dish is bursting with Eastern inspired flavor. If you have a dehydrator available, you may try dehydrating the finished dish to soften and warm the broccoli. Though, you’ll certainly enjoy it either way!

Spicy Citrus Broccoli

serves 4 as a side dish

Spicy Orange Broccoli

For the Spicy Citrus Sauce:

3 tablespoons raw sesame tahini
2 tablespoons coconut aminos, nama shoyu or wheat-free tamari
2 tablespoons cold–pressed sesame oil
1 tablespoon raw honey
2 cloves of garlic, minced
1 teaspoon grated orange zest
¼ teaspoon grated ginger
¼ teaspoon crushed chili pepper
¼ teaspoon Himalayan salt

For the Veggies:

2½ cups broccoli florets, very thinly sliced
½ cup diced red bell pepper
2 small scallions, very thinly sliced

To garnish:

3 tablespoons sesame seed, divided

To Prepare:
Place all ingredients for the Spicy Citrus Sauce into a large bowl and whisk well until smooth. Add the broccoli, bell pepper and scallions to the sauce and toss well to coat. Sprinkle with 2 tablespoons of sesame seed and mix again. If you choose to dehydrate, spread the entire mixture on a teflex lined dehydrator tray. Dehydrate at 105˚ for 3 hours. Divide among 4 plates and sprinkle with the remaining sesame seeds to garnish. Enjoy in pleasure!

In the Kitchen with Natalia – Pretty Parfait

I love fruit based desserts in the summer, full of natural, juicy sweetness! This is a quick and easy parfait that you can make with any fresh, ripe fruit that you have on hand. I used strawberries and kiwis for a bright & colorful combination. Layered with vanilla bean cream and sweet, crunchy pecans, this combination of flavors and textures is so yummy!

Pretty Parfait

serves 4

For the fruit:

2 cups sliced strawberries
4 kiwis, peeled, cut in half and sliced

*or any fruit combination of your choice

For the Vanilla Bean Cream:

¾ cup macadamia nuts, soaked for 2-4 hours, drained and rinsed
3 oz water
2 tablespoons raw honey
seeds of one vanilla bean
¼ cup coconut oil

Place macadamia nuts, water, honey and vanilla in a high-speed blender. Blend on high until smooth. With the blender running, add coconut oil and blend until just combined.

For the Pecan Crunchies:

2 tablespoons of raw honey
½ teaspoon cinnamon
pinch of salt
1 cup raw pecans, preferably soaked for 4-6 hours and dehydrated for 24 hours until crisp
¼ cup shredded coconut

Mix honey, cinnamon and salt in a medium bowl. Roughly chop the pecans either by hand or in a food processor. Keep them chunky. Add pecans to the honey mixture and stir well to coat. Sprinkle with coconut and mix well.

For each parfait, layer as follows:
1. ¼ cup strawberries

2. ½ of a kiwi

3. 2 tablespoons Vanilla Bean Cream

4. ¼ cup Pecan Crunchies

5. ¼ cup strawberries

6. ½ of a kiwi

7. 2 tablespoons Vanilla Bean Cream

8. garnish with any extra fruit

9. 2 tablespoons Pecan Crunchies

What happens when you dangle a disco ball from the ceiling, pull out the ‘ole bell bottoms, afro’s, and platform shoes? You guessed it…disco fever!

This past weekend we checked out DISCOBALL, a Sarasota premiere dance party event hosted by Veronica Pastore and Zak Kirlis with proceeds benefiting the Mote Marine Laboratory’s Oil Spill Emergency Fund.

With star sparkle visuals and decor by Some Guy, the party’s vibe was truly reminiscent of the Studio 54 disco era complete with 70′s music jams provided by Muzakman and DJ Imminent.

Congrats to Veronica and Zak for putting together a seriously groovy party benefiting a most worthy cause! Check out the video…

Showing Solidarity with Hands Across the Sand

“On Saturday, February 13, 2010, the state of Florida was the site of a statewide gathering against offshore oil drilling. Thousands of Floridians representing 60 towns and cities and over 90 beaches joined hands to protest the efforts by the Florida Legislature and the US Congress to lift the ban on oil drilling in the near and off shores of Florida. Florida’s Hands Across The Sand event was the largest gathering in the history of Florida united against oil drilling. Thousands joined hands from Jacksonville to Miami Beach and Key West to Pensacola Beach, each against oil drilling in Florida’s waters.”

After learning that the momentous event would be repeated with plenty of added steam from the BP disaster, Sarasota FL resident Gini Hyman signed on to coordinate the gathering on Siesta Key Beach. She partnered with several concerned citizens, environmental protection agencies, and county commissioners to organize a local Hands Across the Sand event that took place on June 26, 2010.

As reported by Tony Sasso, former Cocoa Beach City Commissioner and Hands Across the Sands coordinator for Florida, the June event spanned over 900 sites globally in 39 countries. In Florida alone the reach was nearly 200 sites representing approximately 20-30,000 people.

For Gini’s efforts, nearly 3,250 people lined up along the shoreline that extended for over 1.6 miles from Siesta Beach to Crescent Beach.

Hands Across The Sand is an organization committed to protecting our coastlines and waterways from near and off shore oil drilling. It is a movement made of people of all walks of life and crosses political affiliations.
