Rosemary Nutty Berry Mix

This recipe was inspired by a sampling of a nutty berry mix during a visit to a local farmers market. It was so delightfully tasteful that it was gone before we left the market!! The unusual combination of sea salt, brown sugar and rosemary brought the nut’s nutritional goodness to a whole new level of tastiness! Speaking of nutritional goodness, this recipe is packed with memory boosting nutrients thanks to the rosemary seasoning, heart healthy omega -3 from the walnuts, powerful protein from the almonds, tons of important trace minerals from the celtic sea salt, cholesterol lowering and antioxidant abilities from the pecans, and plenty of purifying and cleansing action from the cranberries! WOW…I’m looking forward to munching on my next batch of Rosemary Nutty Berry Mix!!

Rosemary Nutty Berry Mix

  • 2 cups of unsalted pecans
  • 2 cups of unsalted almonds
  • 2 cups of unsalted walnuts
  • 1 1/2 cups of dried cranberries
  • 3 sprigs of fresh rosemary (remove the leaves and throw away the stalk)
  • 1 cup of brown sugar
  • 1/2 cup of vegan butter
  • 1 tablespoon of coarse celtic sea salt

Combine nuts and pour it into a large, dry skillet. Set aside. Over a medium heat melt vegan butter and brown sugar together in a heavy saucepan. Stir frequently until the mixture comes to a boil.

Place the skillet containing the nuts on the stove over a medium to low heat setting. Gently pour the melted butter/sugar mixture over the nuts. Mix well so the nuts are evenly coated with the mixture. Add in the rosemary leaves and sea salt. Gently stir the entire mixture frequently until everything has caramelized, approximately 10 minutes. Remove from heat and stir in the dried cranberries. Pour mixture onto a flat non stick surface to cool, I like to use non-stick cookie sheets. After the mixture has cooled, store in an air tight container.

Rosemary Nutty Berry Mix is delicious as a snack, with cocktails, or add it to a salad to give your taste buds a new healthy salad experience!!
