This an easy to make delicious protein/energy bar packed with healthy super food vegan ingredients. I created this bar for my niece, who is an active teenager and a peanut butter lover!! She loves eating this nutty flavored spiriulina, flax, sprouted: quinoa, millet and amaranth protein bar as a pick me up, right after her cross country practices or as a quick boost to increase her brain power for those multi assignment homework days. Feel free to create your own version by substituting peanut butter with other nut butters and adding dried fruit for more antioxidant nutrients. You can even experiment with different natural sugars, to create your own delightfully healthy sweet treat affect. ENJOY!!
Peanut Butter Super Foods Protein Energy Bar
Preheat oven to 350 degrees
1 1/2 cups of Crispy Brown Rice
1 1/2 cups of Rolled Oats
3 tablespoons of ground flax seed
3/4 cup of peanut butter
1/4 cup of honey
1/4 cup of brown rice syrup
1 scoop of Peaceful Planet – The Supreme Meal OR any other superfoods high protein vegan powder
Combine all dry ingredients in a large mixing bowl. In a small saucepan, with medium heat, whisk together the honey, brown rice syrup and peanut butter until smooth and well combined. Remove from the stove and pour over the dry ingredients. Mix until well combined. Spread over a 9×9 well greased pan. Bake in a 350 degree oven for 10 minutes. Remove. Let cool on a rack. Store in an airtight container. Refrigerated lasts up to 3 weeks. Frozen lasts up to 3 months.
